Stuffed Parathas: Delicious whole wheat flatbreads filled with spiced potatoes (Aloo Paratha) and paneer (Paneer Paratha). Laccha Paratha: A flaky, multi-layered bread that’s as fun to make as it is to eat. We’ll guide you through three flavorful, plant-based dishes that are as comforting as they are nutritious. On the Menu: Moong Dal Chilla with Tofu filling – A savory, protein-rich pancake made from green moong lentils, crisp on the edges and filled with seasoned tofu Indian-Style Lentil Soup – A warming red lentil soup infused with aromatic spices like cumin, ginger, and turmeric—healing, hearty, and full of flavor Khichri – A beloved one-pot meal of rice and lentils, delicately seasoned and deeply satisfying served with yogurt raita —ideal for cozy nights or wholesome family dinners. Learn foundational techniques like soaking and cooking lentils, tempering spices, and building layers of flavor from simple ingredients. Together we’ll prepare three comforting, flavorful vegetarian dishes: Rajma, a hearty red kidney bean curry simmered with warming spices; Matar Paneer, a classic dish of peas and paneer in a spiced tomato-onion gravy; and Tofu Bhurji, a plant-forward twist on scrambled paneer, full of bright herbs and spices. In this class, you’ll learn essential Indian cooking techniques—like building a masala base, balancing spices, and creating depth of flavor with simple ingredients. Along the way, we’ll talk about the nutritional benefits of spices, legumes, and plant-based proteins, and how to bring these wholesome, satisfying meals into your weekly cooking routine.
