Cavatelli are small shell shaped hand formed pasta from southern Italy characterized by their hollow center and often ribbed texture, which are excellent for capturing sauce. They are traditionally made from eggless dough and are versatile, pairing well with hearty meat sauces, lighter vegetable sauces, and seafood dishes. No machine needed, only clean hands and a smile. The simple, repetitive, and tactile nature of working with the dough can be soothing and mindful, offering a welcome break from the stresses of modern life.
